2 pieces flank steak or any
thin sliced beef -- about 1/2
pound (I probably used abt. 1.5 - 2 lbs)
1/2 head broccoli (I just used a bag of frozen but cooked a little beforehand)
1/4 onion
1/2 head cauliflower
1 egg -- beaten
Olive oil
Soy sauce
Garlic Salt
1/4 cup water
Cut beef into strips. Stir fry in olive oil on medium high heat, season
slightly with Garlic salt. Add 1/4 cup water, 1/2 head Broccoli (cut in small
pieces) and sliced onion. Add and a splash of soy sauce and cook on medium
heat until broccoli and onion are cooked. (I like my broccoli somewhat soft, but if you like yours crunchier, cook less time).
Cut the cauliflower florets into tiny pieces (like rice) Stir fry in olive oil, add a splash of soy sauce and garlic salt. Add 1 egg and stir fry until egg is cooked and cauliflower is just getting tender. If it still tastes like cauliflower add a little more soy sauce.
Pour the broccoli/beef mixture over the "Fried Rice"
NOTES: This was awesome! I used my wok to make this, but I used a lot more beef and broccoli. I didn't really measure and just added enough of everything so it looked right. This way it fed my family of 5 with leftovers for me for lunch the next day! I bought the stir fry beef that was already cut, but it was a little tough so next time I will cut it myself thinner. I also used frozen broccoli and cooked it a little before adding it to the wok. The fried "rice" was REALLY good - doesn't taste at all like cauliflower if you add enough soy sauce. Yummy enough to eat by itself as a side dish. I didn't feel like getting out my food processor, so I attempted to cut up the cauliflower by hand - not an easy task!
