Diane's Chicken Sausage Jambalaya

1 pkg. smoked sausage (I use Bob Evans or Hillshire Farms)
1 pound or more of chicken breasts (boneless, skinless - I probably use close to 2 lbs)
Olive Oil
1 1/2 cups chopped onions
1 1/2 cups chopped green peppers (onions and peppers can be less if you want. I cut them very small)

SEASONING

2 bay leaves
1 tsp. salt
1/2 tsp. thyme
1 tsp. oregano
1/4 tsp. cayenne pepper
Red Pepper Hot Sauce
1 tsp. garlic powder

1 8oz can tomato sauce
Cauliflower "rice" (see below)
Chicken broth (2 cups (more/less) depending on if you want it "soupy" or not)

1. Boil the chicken breasts in water for about 20 mins until cooked through.
2. Cut chicken into chunks. Slice sausage.
3. Sauté sausage in large pot over medium high heat for 5 minutes or so in olive oil.
4. Add the chicken chunks and cook for another 5 mins.. you can add oil as needed.
5. Remove chicken and sausage from the pot and put aside.
6. Sauté the onions and peppers in a little more olive oil until lightly browned or tender.
7. Add the seasonings and continue cooking for abt 5 mins stirring frequently.
8. Add tomato sauce and mix well. Cook for 5 minutes.
9. Add chicken broth and cauliflower "rice" and bring to a boil. Reduce heat, cover pot, and simmer 20 mins.
10. Place chicken and sausage back into pot and cook for 5 mins.


NOTES: CAULIFLOWER "RICE": I chopped up about half a head (may use more next time) of fresh cauliflower, cutting it as small as I could so it would be kind of like rice and added it to the pot the last 20 mins or so of cooking. I add more red pepper hot sauce to taste. This is a family favorite with REAL rice, but they also loved it without. They didn't even know it had cauliflower in it. With the broth, 2 cups and it was "slightly soupy" but still plenty "chunky"... use less if you want it less soupy. I did add a LITTLE bit of corn starch to thicken it up a bit, but it didn't work that great and it adds too many unnecessary carbs. The kids this last time ate it on top of mashed potatoes to help soak up some of the liquid. They went back for seconds and thirds!

I am not sure about the carb counts, but when I entered it in one of those recipe programs I believe it had about 5 carbs for a decent sized serving. It could easily serve 6-8 or more.
