TACO SALAD #1
1 lb. ground beef
4 oz. tomato sauce
1 TBS cumin
1 TBS chili powder
1 tsp garlic powder
Salt & Pepper
Cheddar Cheese
Sour Cream
Tomato
Avocado
Salsa (I like Pace Picante Sauce)
Cook ground beef and drain. Add tomato sauce and spices and simmer for about 5-10 minutes stirring
often. Put one serving of meat in a bowl (as much as you want to eat in one sitting) and top with cheese, tomato, avocado, sour cream and salsa.
NOTES: This is absolutely one of my favorite things to eat that are lowcarb. You COULD have
this in a lc tortilla, but it will a lot more carbs. I usually get at least 2 huge servings out of this or up to four servings.
I usually double the recipe so I have leftovers for several days.

Iceburg Lettuce, shredded (or chopped small)
Cheddar Cheese
Tomato
Avocado
Ranch Dressing
Cook ground beef and drain.
Add tomato sauce and spices.
Simmer for about 5-10 minutes, stirring often.
Shred lettuce, cut up tomato and avocado.
Mix meat, lettuce and all toppings. Stir it up!
NOTES: If you have some good lowcarb tortilla chips, it might be good to crumble them up into this as well.
I used to use regular tortilla chips for this, but no more! I may try this with the new
low carb Tostitos chips someday.
